Vinification notes

All grape varieties used in the blend were harvested once they had reached technological and phenolic ripeness. The grapes were then destemmed and fermented for approximately 10 days at a controlled temperature of 26°C, using selected yeasts. Once alcoholic fermentation was complete, malolactic fermentation was carried out. Finally, the wine was aged for six months on fine lees in stainless steel tanks, gaining greater complexity and structure.

Facts about the name

The Latin translation of "serpent", it is inspired by the deep historical and symbolic connection with the cult of Juno Sospita, an ancient protective deity. As early as the first half of the 7th century BC, the great sanctuary dedicated to the goddess was a spiritual center renowned throughout the ancient world for its extraordinary rituals. Among them, the cult of the sacred serpent stood out: a creature revered as a divine manifestation and a symbol of fertility, abundance, and protection.
