Charmat method sparkling wine obtained only from Bellone grapes, a local white grape variety, grown on our estate on volcanic soils.

Vinification notes

The must, obtained through gentle pressing, underwent cold static settling to encourage natural clarification. Fermentation took place over 12 days at a controlled temperature of 18°C, using selected varietal yeasts to enhance the grape variety's aromatic profile. The wine was then made sparkling using the Charmat method.

    Bright straw yellow with greenish hues, fine and persistent perlage.

  • Bouquet

    Intense and refined, with notes of white flowers, pear, citron, and grapefruit, alongside mineral and smoky hints, flinty nuances, and subtle saline accents.

  • Taste

    Fresh and vibrant on the palate, savory, taut and vertical. Bellone's structure supports an elegant, highly drinkable palate, with a citrus and mineral finish.

    Raw seafood, oysters, fish carpaccio, light fried dishes, fresh cheeses, plant-based Mediterranean cuisine.

Facts about the name

The name is rooted in the language of ancient navigation, evoking the anchor as a symbol of stillness and suspension. Ad ancoram stare, in ancoris stat: still upon the water, in balance, ready to set sail again. The mosaic echoes the decoration of great Roman ships: precious surfaces designed not only for navigation, but for inhabiting the slow time of stillness. Anchoram was conceived as a tribute to an inner voyage, its bow already turned toward the next wind.
